2 cups of fresh or frozen mixed stir fry vegetables
1 tablespoon canola oil
3 tablespoons peanut butter
3 tablespoons low-sodium soy sauce
2 tablespoons unsweetened applesauce
1 teaspoon cornstarch or flour
Pinch of red pepper flakes
1 cup brown rice, cooked (or you can substitute whole-grain pasta noodles)
Makes 2 servings

Directions
Cook rice according to directions.
Heat oil in a skillet on medium-high heat.
Add vegetables. Cook until tender.
In small bowl, combine peanut butter, soy sauce, apple sauce, cornstarch/flour, pepper flakes, and 2 tablespoons of water. Mix well.
Mix in peanut sauce. Stir until vegetables are well coated. If peanut sauce is too thick, add water. If peanut sauce Is too watery, add cornstarch/flour.
Serve over brown rice.
